📝 Quick summary of key information

What is Leaven and how does it make bread rise?

Sourdough is a mix of bacteria and yeast. It is used to make bread rise. Imagine a tiny world living in your bread dough, that's sourdough!

To make sourdough starter, you mix flour and water. Then, you let the mixture rest at room temperature. After a few days, little bubbles appear. This means the sourdough starter is ready.

The starter makes carbon dioxide, a gas that makes the dough rise. It's like tiny invisible balloons that push the dough up, making it rise.

Sourdough bread has a soft texture and a unique taste. It is often easier to digest and has a special flavor that changes depending on the ingredients used and the fermentation time.

The Adventures of Leaven

What is Leaven and how does it make bread rise?

The Discovery of Leaven

After discovering how flour is made using an old grain mill, Leo, wearing a white apron with chocolate stains and a colorful chef's hat, and Lila, wearing a pink apron with little cakes drawn on it and her brown hair tied in a ponytail, meet a little red squirrel named Farineau. He explains how wheat grains are turned into magical powder, ready to be used for enchanted pastries. Leo and Lila are fascinated by this transformation and decide to continue their exploration in the Little Baker's Bakery. That's when they spot a mischievous little sprite named Leaven, about 50 centimeters tall, who seems to be floating above a big bowl of dough. He has curly blond hair and bright green eyes. His pointy hat is decorated with flowers and leaves, and he wears a blue tunic with golden buttons. His shoes are small brown leather boots, and he often has a bag slung over his shoulder filled with forest treasures.

Leo, curious, asks:
« What are you doing, Leaven? »

Lila, curious, asks:
« What is this dough? »

Leaven, with a mischievous smile, talks to the kids:
« I am Leaven. I make the dough rise. »

Leo, curious, asks:
« How do you do that? »

Leaven, with a mischievous smile, explains: « I am a mix(1) of bacteria(2) and yeast(3). I make carbon dioxide. This makes the dough rise. »

With Leaven's help, they prepare some bread dough and let it rest. They watch in amazement as the dough doubles in size thanks to Leaven's action.

The Magic of Leaven

Not long after, Leo and Lila check on their dough. They are amazed to see that it has doubled in size!

Leaven, with a mischievous smile, explains:
« The bacteria and yeast made carbon dioxide. »

Leaven, with a mischievous smile, explains:
« It made the dough rise. »

Leo, curious, asks: « Now that the dough has risen nicely, how do we knead(4) it? »

Leaven, with a mischievous smile, says:
« Knead the dough one last time to spread the air bubbles. »

Leo and Lila have fun kneading the dough. They feel the softness and elasticity(5) under their fingers. Leaven tells them that leaven has been used for centuries to make bread rise. It gives it a soft(6) texture and a unique taste.

After watching the dough double in size, Leo and Lila are invited to explore the Enchanted Spice Garden by Leaven. Leaven tells them that this garden is a magical place where rare spice plants grow. They discover magical spice plants, learning which spices(7) are used in baking and why they are so important. Leo and Lila can't wait to discover new flavors and create even more magical pastries. They now know that leaven is an essential part of baking and will help them create sweet and delicious treats. With their new knowledge, they are ready for new adventures in the Little Baker's Bakery, eager to discover even more baking secrets.
